Spinach Salad with Apples and Oranges with Citrus Vinaigrette

A refreshing crisp fruity spinach salad with the perfect crunch of apples, celery and tangy oranges, complemented by the citrus vinaigrette.

Makes 6 servings

6 cups baby spinach or 1 (6-ounce) package fresh baby spinach
1 cup chopped red apples
1 cup chopped green apples
1 cup chopped celery
1 (11-ounce) can mandarin oranges, drained and reserving 3 tablespoons mandarin juice
Citrus Vinaigrette (recipe follows)

  1. In large bowl, combine spinach, red and green apples, celery and oranges; toss with Citrus Vinaigrette (see recipe).

Citrus Vinaigrette
Light and citrusy makes a wonderful vinaigrette.

1/2 teaspoon Dijon mustard
Salt and pepper to taste
2 tablespoons lemon juice
3 tablespoons reserved mandarin juice
2 tablespoons honey
2 tablespoons olive oil

  1. In bowl, whisk together all ingredients.
