Scrambled Cheese Egg Pizza

Breakfast, snack or an any time meal with scrambled eggs on an English muffin. Full of healthy nutrients; feel free to add optional toppings such as spinach, onions, and tomatoes for extra nutrition depending on how you feel.
Makes 6 muffin halves
1/2 cup chopped Canadian bacon
5 egg whites
Salt and pepper to taste
3 English muffins, halved
1/2 cup reduced-fat shredded Cheddar cheese
- In nonstick skillet coated with nonstick cooking spray, cook Canadian bacon 2 minutes or until begins to brown.
- In small bowl, whisk together eggs and egg whites. In same nonstick skillet coated with nonstick cooking spray, scramble eggs. Season to taste.
- Meanwhile, toast muffin halves. Divide scrambled eggs to top muffin halves. Sprinkle with cheese.
